Ingredients
188 grams of silken tofu
6 egg whites
63 grams of minced chicken
31 grams of minced pork fat
63 grams of vegetable leaf juice
63 grams of milk
1 cooked duck egg
6 grams of cooking wine
2 grams of refined salt
3 grams of scallion-ginger juice
94 grams of clear soup
9 grams of hot oil

Cooking Steps
Mix minced chicken and minced pork fat with clear soup, cooking wine, and scallion-ginger juice. Add egg whites and silken tofu, and stir until well combined. Divide the mixture into two portions. Mix one portion with milk and the other with vegetable leaf juice.
Take a large soup bowl and place an S-shaped piece of iron skin in the middle. Pour the green vegetable juice tofu mixture on one side and the white tofu mixture on the other side. Steam over low heat for about twenty minutes until cooked. Remove from the steamer. Place a small piece of red duck egg yolk on top of the white chicken mince tofu and a small piece of cooked chicken egg white on top of the green chicken mince tofu.
Serve.

Silken Tofu Preparation Method:
• Soak the soybeans in water until they swell, then rinse them clean.
• Grind the soaked soybeans with water until it becomes a fine slurry. Filter out the residue with a cloth bag to obtain soy milk.
• In another container, dissolve the cooked gypsum powder in water. Transfer the soy milk into a wooden barrel, heat it, and pour it into the gypsum water. Cover the barrel and let it sit for about ten minutes until it solidifies into silken tofu.

Every 100 grams of silken tofu contains 5.3 grams of protein, 1.9 grams of fat, 1 gram of carbohydrates, 42 kilocalories of energy, 20 milligrams of sodium, 56 milligrams of phosphorus, 0.6 milligrams of iron, 0.04 milligrams of vitamin B1, 0.2 milligrams of vitamin B6, and 0.03 milligrams of vitamin B2.
Silken tofu can be cooked in various dishes using methods such as boiling, braising, steaming, stewing, and honey glazing. It is easily absorbed by the human body, with a digestion rate of over 90%.
