Cold Tossed Tofu (2) - Loin Slices with Tofu

• Ingredients:
   - 6 liang (187.5 grams) of tender tofu
   - 5 qian (15.625 grams) of sesame paste
   - 3 qian (9.375 grams) of balsamic vinegar
   - 6 liang (187.5 grams) of pork loin
   - 1 qian (3.125 grams) of chopped scallions
   - 3 qian (9.375 grams) of sesame oil
   - 1 qian (3.125 grams) of table salt

• Cooking Steps:
1. Cut the tender tofu into rectangular thin slices. Pour boiling water over them several times, drain the water, and let them cool on a flat plate.
2. Split the pork loin and remove the excess fat. Cut it into thin slices and rinse with clean water. Blanch the slices in boiling water, then remove and drain. Arrange them on the tofu plate to cool.
3. Mix sesame oil, sesame paste, table salt, balsamic vinegar, and chopped scallions in a small bowl. Pour the mixture over the loin slices and tofu.
