Recipe and Cooking Method 

Ingredients:
- Silken tofu: 450 grams
- Egg whites: 6
- Milk: 45 grams
- Fish floss: 45 grams
- Green peas: 1.125 grams

Seasonings:

- Soaked dried shiitake mushrooms, finely chopped: 11.25 grams
- Finely chopped scallions and ginger: 3.75 grams
- Cooking wine: 7.5 grams

- Cornstarch: 18.75 grams

Instructions:
1. Mix silken tofu, egg whites, milk, salt, and monosodium glutamate evenly. Steam over low heat for 20 minutes. Remove from heat and cut into diamond-shaped pieces.
2. Marinate fish floss in cooking wine and salt. Add egg whites and cornstarch mixture. Stir-fry in warm oil until cooked. Drain excess oil.
3. Heat a pan with oil. Stir-fry scallions and ginger until fragrant. Add cooking wine, clear broth, cooked ham, green peas, diced shiitake mushrooms, salt, and monosodium glutamate. Bring to a boil. Thicken the sauce with cornstarch. Add fish floss and mix well. Drizzle with a little sesame oil. Pour the mixture over the tofu.
